They will all be cold on these dates. Paris can be especially bitter, however, the south of France (Marseille etc) will be somewhat milder although this has also been known to have snow!!!
I don’t know if Youth Hostels on the Continent are open year round but I would research that. B&Bs are one of the cheaper options as well.
Travel by local bus between towns/cities, hitchhike (if you are not carrying too much luggage), find out about a month long rail ticket and see how that works out.
