Check with a travel agency who SHOULD really know, but as far as Germany, I was once stationed there and they were good about closing or closing early on holidays.

I think that you are going to have a great time in europe. there are only two problems:
1. Weather: its going to be pretty hot there
2. Your stay: you are going to stay in italy only 2 days? come on, you need to stay at least 2 weeks. In 2 days you are not going to see anything from italy.

Europe is not going to shut down in August, rest assured. This is the main tourist season (catering to European tourists, too), so everything will be open. 2-3 days for each country sounds a little short, though.

For high and off season just plan on spending little more otherwise enjoy your trip.

An email if youre visitor youll be ok heres some places that you need to book ahead for tourists its just the sake of having things can.
